Here’s a simple and delicious Cabbage Soup recipe — it’s healthy, budget-friendly, and easy to make!


🥣 Classic Cabbage Soup Recipe

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 1/2 head of green cabbage, chopped

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 6 cups vegetable or chicken broth

  • 1 teaspoon salt (or to taste)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon paprika (optional)

  • 1 bay leaf

  • Optional: 1-2 cups chopped potatoes or beans for added heartiness


Instructions:

  1. Sauté the aromatics:
    In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened (about 3-4 minutes).

  2. Add vegetables:
    Stir in carrots, celery, and cabbage. Cook for about 5 minutes until slightly tender.

  3. Add liquids and seasonings:
    Pour in the diced tomatoes and broth. Add salt, pepper, thyme, paprika, and bay leaf. Stir to combine.

  4. Simmer:
    Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, or until all vegetables are soft and flavors meld.

  5. Adjust and serve:
    Taste and adjust seasoning if needed. Remove bay leaf before serving.

  • Add beans or lentils for protein.

  • Use red cabbage for a different color and slightly sweeter flavor.

  • Stir in a splash of vinegar or lemon juice at the end for brightness.
