🦐🌿 Creamy Low-Carb Tuscan Shrimp

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ¼ tsp crushed red pepper flakes (optional)

  • 2 cups baby spinach

  • ½ cup sun-dried tomatoes, chopped (oil-packed, drained)

  • Salt & pepper, to taste

  • Fresh parsley, for garnish

  • Optional: zest of ½ lemon for brightness


Instructions:

  1. Cook the Shrimp:

    • Season shrimp with salt and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Sear shrimp for 1–2 minutes per side until pink and just cooked through. Remove and set aside.

  2. Make the Creamy Sauce:

    • In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 30 seconds until fragrant.

    • Stir in the sun-dried tomatoes and cook for another minute.

    • Pour in heavy cream and bring to a gentle simmer.

    • Add Parmesan, Italian seasoning, and red pepper flakes. Stir until smooth and slightly thickened (about 2–3 minutes).

  3. Add Greens & Shrimp:

    • Stir in spinach and let it wilt (1–2 minutes).

    • Return shrimp to the pan and toss in the sauce to coat. Simmer for another minute until heated through.

  4. Finish & Serve:

    • Taste and adjust seasoning. Add lemon zest if using.

    • Garnish with parsley and serve immediately.


Serving Suggestions (Low-Carb Options):

  • Over zucchini noodles (zoodles)

  • On top of cauliflower rice

  • Alongside steamed broccoli or roasted asparagus
