: Roasted Parmesan Creamed Onions

Here’s a rich, savory side dish that’s perfect for special dinners or holiday tables:


🧅 Roasted Parmesan Creamed Onions

Sweet, tender roasted onions baked in a creamy parmesan sauce—simple, elegant, and full of umami.


Ingredients:

  • 4–5 medium yellow or sweet onions, peeled and halved

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese (plus extra for topping)

  • 1/4 tsp garlic powder

  • A few sprigs of fresh thyme (optional)


🔥 Instructions:

1. Roast the Onions:

  1. Preheat oven to 400°F (200°C).

  2. Place halved onions, cut side up, in a baking dish.

  3. Drizzle with olive oil, season with salt and pepper.

  4. Roast uncovered for 30–35 minutes, until edges are golden and softening.

2. Make the Parmesan Cream:

  1. In a small saucepan, warm heavy cream over medium heat.

  2. Stir in Parmesan, garlic powder, and a bit more salt and pepper.

  3. Simmer gently until slightly thickened, 3–5 minutes.

3. Combine & Finish:

  1. Pour the cream sauce evenly over the roasted onions.

  2. Sprinkle with a little more Parmesan and optional thyme.

  3. Return to oven and bake for another 15 minutes, or until bubbly and golden.


🧄 Optional Add-Ins:

  • Roasted garlic cloves between onions

  • A handful of panko breadcrumbs on top for crunch

  • Swap in Gruyère or fontina for a cheesier variation
