Here’s a simple and delicious recipe for Vanilla Pudding with Crunchy Cracker Crumble — creamy, smooth pudding paired with a salty-sweet crunchy topping that takes it to the next level!


🍮 Vanilla Pudding with Crunchy Cracker Crumble

Ingredients:

For the Vanilla Pudding:

  • 2 cups whole milk

  • 1/2 cup granulated sugar

  • 1/4 cup cornstarch

  • 1/4 tsp salt

  • 2 large egg yolks

  • 2 tbsp unsalted butter

  • 2 tsp pure vanilla extract

For the Cracker Crumble:

  • 1 cup buttery crackers (like Ritz), crushed

  • 2 tbsp melted butter

  • 1 tbsp brown sugar

  • Pinch of cinnamon (optional)


🥄 Instructions:

1. Make the Vanilla Pudding:

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.

  2. Gradually whisk in milk, then stir in the egg yolks.

  3. Cook over medium heat, whisking constantly, until the mixture thickens and bubbles (about 5–7 minutes).

  4. Remove from heat, stir in butter and vanilla until smooth.

  5. Pour into serving cups and cover the surface with plastic wrap to prevent a skin from forming. Chill for at least 1–2 hours.

2. Make the Cracker Crumble:

  1. Preheat oven to 350°F (175°C).

  2. Mix crushed crackers, melted butter, brown sugar, and cinnamon in a bowl.

  3. Spread on a baking sheet and bake for 5–7 minutes, or until golden and crisp. Cool completely.

3. Assemble & Serve:

  • Spoon chilled pudding into bowls or glasses.

  • Top generously with the cracker crumble right before serving to keep it crunchy.

  • Optional: Add a dollop of whipped cream or fresh berries for flair!
