🍮 Vanilla Pudding with Crunchy Cracker Crumble
Ingredients:
For the Vanilla Pudding:
-
2 cups whole milk
-
1/2 cup granulated sugar
-
1/4 cup cornstarch
-
1/4 tsp salt
-
2 large egg yolks
-
2 tbsp unsalted butter
-
2 tsp pure vanilla extract
For the Cracker Crumble:
-
1 cup buttery crackers (like Ritz), crushed
-
2 tbsp melted butter
-
1 tbsp brown sugar
-
Pinch of cinnamon (optional)
🥄 Instructions:
1. Make the Vanilla Pudding:
-
In a medium saucepan, whisk together sugar, cornstarch, and salt.
-
Gradually whisk in milk, then stir in the egg yolks.
-
Cook over medium heat, whisking constantly, until the mixture thickens and bubbles (about 5–7 minutes).
-
Remove from heat, stir in butter and vanilla until smooth.
-
Pour into serving cups and cover the surface with plastic wrap to prevent a skin from forming. Chill for at least 1–2 hours.
2. Make the Cracker Crumble:
-
Preheat oven to 350°F (175°C).
-
Mix crushed crackers, melted butter, brown sugar, and cinnamon in a bowl.
-
Spread on a baking sheet and bake for 5–7 minutes, or until golden and crisp. Cool completely.
3. Assemble & Serve:
-
Spoon chilled pudding into bowls or glasses.
-
Top generously with the cracker crumble right before serving to keep it crunchy.
-
Optional: Add a dollop of whipped cream or fresh berries for flair!
