CREAMY CUCUMBER SALAD

Here’s a simple and refreshing Creamy Cucumber Salad recipe — perfect for summer meals, BBQs, or as a cooling side dish.


🥒 Creamy Cucumber Salad

Ingredients:

  • 2 large cucumbers, thinly sliced (English or Persian cucumbers work best)

  • 1/2 small red onion, thinly sliced (optional but adds a great kick)

  • 1/2 cup sour cream (or Greek yogurt for a lighter option)

  • 2 tablespoons mayonnaise (adds richness)

  • 1 tablespoon white vinegar or lemon juice

  • 1 teaspoon sugar

  • 1 tablespoon fresh dill, chopped (or 1/2 tsp dried)

  • Salt & pepper, to taste


🥣 Instructions:

  1. Prepare cucumbers:

    • Slice cucumbers thinly using a knife or mandoline.

    • Optional: Sprinkle with a little salt and let sit in a colander for 15–20 minutes. Then pat dry — this removes excess water and prevents sogginess.

  2. Make the dressing:

    • In a bowl, mix sour cream, mayo, vinegar (or lemon juice), sugar, dill, salt, and pepper until smooth.

  3. Combine:

    • Toss the cucumbers and onions (if using) with the dressing.

    • Chill for at least 30 minutes before serving to let flavors meld.


🌿 Tips & Variations:

  • Add-ins: Try thinly sliced radishes or chopped fresh chives.

  • Dairy-free option: Use plant-based yogurt or sour cream alternatives.

  • No mayo? Use all sour cream or substitute with Greek yogurt entirely.
