🥜 Peanut Butter Balls
(Also known as Buckeyes if partially dipped in chocolate!)
Ingredients:

1½ cups creamy peanut butter

½ cup (1 stick) unsalted butter, softened

1 tsp vanilla extract

2–2½ cups powdered sugar (adjust for desired consistency)

2 cups semisweet or milk chocolate chips

1 tbsp shortening or coconut oil (optional, for smoother melting)
Instructions:

Make the peanut butter mixture:

In a large bowl, mix together peanut butter, butter, and vanilla until smooth.

Gradually add powdered sugar, stirring until a firm dough forms (should be easy to roll into balls without sticking).

Form the balls:

Roll into 1-inch balls and place on a parchment-lined baking sheet.

Chill in the refrigerator or freezer for 20–30 minutes to firm up.

Melt the chocolate:

In a microwave-safe bowl, melt chocolate chips (with shortening or coconut oil if using) in 30-second intervals, stirring in between until smooth.

Dip and coat:

Using a fork or toothpick, dip each ball into the melted chocolate.

Fully coat or leave the top exposed for a “buckeye” look.

Place back on the parchment-lined sheet.

Chill until set:

Refrigerate for 30 minutes or until chocolate is firm.

Add a pinch of salt if your peanut butter is unsalted.

Store in the fridge in an airtight container for up to 2 weeks, or freeze for longer storage.

For a crunchy version, use crunchy peanut butter or stir in crushed Rice Krispies.
