Cowboy Casserole

Here’s a hearty, crowd-pleasing Cowboy Casserole recipe—comfort food at its finest! It’s packed with ground beef, creamy goodness, corn, cheese, and topped with crispy tater tots. Perfect for weeknight dinners, potlucks, or when you need something filling and satisfying.


🤠 Cowboy Casserole

Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 (10.5 oz) can cream of mushroom soup

  • ½ cup sour cream

  • 1 (15 oz) can corn, drained (or 1½ cups frozen corn)

  • 1½ cups shredded cheddar cheese, divided

  • ½ tsp smoked paprika (optional)

  • Salt & pepper, to taste

  • 1 (28–32 oz) bag frozen tater tots


Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Cook the beef mixture:

    • In a large skillet, brown the ground beef over medium heat. Add onions and garlic; cook until softened.

    • Drain excess grease.

    • Stir in cream of mushroom soup, sour cream, corn, 1 cup of cheese, paprika, salt, and pepper. Mix well.

  3. Assemble the casserole:

    • Spread the beef mixture evenly into the prepared baking dish.

    • Arrange tater tots in a single layer on top.

  4. Bake:

    • Bake uncovered for 35–40 minutes, or until tater tots are golden and crispy.

  5. Top with cheese:

    • Sprinkle the remaining ½ cup of cheese over the top.

    • Return to oven for 5–10 more minutes, until cheese is melted and bubbly.

  6. Cool slightly and serve.


💡 Tips:

  • Want it spicier? Add chopped jalapeños or a dash of hot sauce to the meat mixture.

  • Swap in ground turkey or sausage for variety.

  • Serve with a dollop of sour cream or chopped green onions for extra flair.
