Ingredients (Makes 2 sandwiches):
Garlic Butter:

Sandwich:

4 slices thick-cut bread (Texas toast, sourdough, or Italian bread work great)

1 cup cooked shrimp, peeled, deveined, and chopped (or leave whole if small)

½ cup shredded mozzarella cheese

½ cup shredded cheddar or Monterey Jack cheese

1 tbsp olive oil or butter (for cooking)

Optional: red pepper flakes, lemon zest, or a dash of hot sauce for extra flavor
Instructions:

Make garlic butter:

In a small bowl, combine softened butter, garlic, parsley, and a pinch of salt. Mix until smooth.

Prep bread:

Spread garlic butter generously on one side of each bread slice. These will be the outside of the sandwich.

On the unbuttered side of 2 slices, layer:
