Here’s an indulgent, flavor-packed recipe for Cheesy Garlic Bread Shrimp Grilled Cheese—a rich twist on the classic grilled cheese, perfect for seafood lovers and comfort food fans alike.


🧄🧀🦐 Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients (Makes 2 sandwiches):

Garlic Butter:

  • 4 tbsp unsalted butter, softened

  • 2 garlic cloves, minced

  • 1 tbsp chopped fresh parsley (or 1 tsp dried)

  • Pinch of salt

Sandwich:

  • 4 slices thick-cut bread (Texas toast, sourdough, or Italian bread work great)

  • 1 cup cooked shrimp, peeled, deveined, and chopped (or leave whole if small)

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded cheddar or Monterey Jack cheese

  • 1 tbsp olive oil or butter (for cooking)

  • Optional: red pepper flakes, lemon zest, or a dash of hot sauce for extra flavor


Instructions:

  1. Make garlic butter:

    • In a small bowl, combine softened butter, garlic, parsley, and a pinch of salt. Mix until smooth.

  2. Prep bread:

    • Spread garlic butter generously on one side of each bread slice. These will be the outside of the sandwich.

  3. Assemble sandwiches:

    • On the unbuttered side of 2 slices, layer:

      • A mix of cheeses

      • Cooked shrimp (season with a little salt, pepper, or lemon zest if desired)

      • More cheese on top to help it melt together

    • Top each with the second slice of bread, garlic butter side out.

  4. Grill the sandwiches:

    • Heat a skillet or griddle over medium heat. Add a bit of oil or butter.

    • Cook sandwiches for 3–4 minutes per side, pressing gently, until golden brown and the cheese is fully melted.

  5. Serve:

    • Let rest for 1–2 minutes before slicing.

    • Serve hot with a squeeze of lemon, marinara, or aioli if desired.


💡 Tips:

  • Use pre-cooked shrimp to make this even faster.

  • Want extra gooeyness? Add a slice of cream cheese or a cheese spread layer.

  • For spice, sprinkle in Cajun seasoning or chili flakes with the shrimp.
