Here’s a cozy and satisfying recipe for Homemade Potato Cakes—crispy on the outside, tender on the inside, and perfect for breakfast, a snack, or a comforting side dish.


🥔 Homemade Potato Cakes

Ingredients:

  • 2 cups mashed potatoes (leftovers work great!)

  • 1 cup shredded cheddar cheese (optional but delicious)

  • ¼ cup chopped green onions or chives

  • 1 egg

  • ¼ cup all-purpose flour (plus extra for dusting)

  • Salt and pepper to taste

  • 2–3 tbsp oil or butter for frying


Instructions:

  1. Mix the batter:

    • In a large bowl, combine mashed potatoes, cheese, green onions, egg, and flour.

    • Season with salt and pepper.

    • Mix until well combined. The mixture should be thick enough to hold its shape. If it’s too wet, add a little more flour.

  2. Form the cakes:

    • Lightly flour your hands.

    • Scoop out ¼ cup of the mixture and form into a patty about ½ inch thick.

    • Lightly dredge each cake in flour for extra crispiness.

  3. Fry the cakes:

    • Heat oil or butter in a large skillet over medium heat.

    • Add the potato cakes (in batches if needed) and cook for 3–5 minutes per side, or until golden brown and crispy.

  4. Drain and serve:

    • Transfer to a paper towel-lined plate to drain excess oil.

    • Serve hot, topped with sour cream, applesauce, or more green onions if desired.


💡 Tips:

  • Add crumbled bacon, diced ham, or sautéed onions for extra flavor.

  • Make them smaller for a fun appetizer or party snack.

  • Use cold mashed potatoes straight from the fridge—it makes them easier to shape and fry.
