Ingredients:

2 cups mashed potatoes (leftovers work great!)

1 cup shredded cheddar cheese (optional but delicious)

¼ cup chopped green onions or chives

¼ cup all-purpose flour (plus extra for dusting)

Salt and pepper to taste

2–3 tbsp oil or butter for frying
Instructions:

Mix the batter:

In a large bowl, combine mashed potatoes, cheese, green onions, egg, and flour.

Season with salt and pepper.

Mix until well combined. The mixture should be thick enough to hold its shape. If it’s too wet, add a little more flour.

Form the cakes:

Lightly flour your hands.

Scoop out ¼ cup of the mixture and form into a patty about ½ inch thick.

Fry the cakes:

Add the potato cakes (in batches if needed) and cook for 3–5 minutes per side, or until golden brown and crispy.
