Here’s a crispy, golden Air Fryer German Potato Pancakes recipe (aka Kartoffelpuffer) that delivers authentic flavor with less oil. These are perfect for breakfast, a snack, or a savory side—served traditionally with applesauce or sour cream.

📝 Ingredients:

  • 4 medium russet potatoes, peeled

  • 1 small onion

  • 1 large egg

  • 2–3 tbsp all-purpose flour

  • 1/2 tsp salt (more to taste)

  • 1/4 tsp pepper

  • Optional: pinch of nutmeg or garlic powder

  • Spray oil or light olive oil for brushing


👩‍🍳 Instructions:

  1. Grate the Potatoes & Onion:

    • Use a box grater or food processor to grate potatoes and onion.

    • Place mixture in a clean kitchen towel and squeeze out as much liquid as possible. This is key for crispiness!

  2. Mix the Batter:

    • In a bowl, combine grated potatoes and onion with the egg, flour, salt, pepper, and any optional seasoning.

    • Mix well until it holds together.

  3. Preheat the Air Fryer:

    • Set to 375°F (190°C) and let preheat for a few minutes.

  4. Shape the Pancakes:

    • Scoop about 2–3 tbsp of mixture and flatten into thin pancakes (about 1/4 inch thick).

    • Lightly spray or brush both sides with oil.

  5. Air Fry:

    • Place pancakes in a single layer in the air fryer basket (work in batches if needed).

    • Cook for 10–12 minutes, flipping halfway through, until golden brown and crisp on both sides.

  6. Serve Warm:

    • Traditional toppings: applesauce or sour cream.

    • For savory twists: top with smoked salmon, chives, or a dollop of herbed cream cheese.


🔥 Tips:

  • Don’t skip squeezing the liquid from potatoes/onion—excess moisture makes soggy pancakes.

  • For extra crisp, let pancakes cool slightly on a wire rack instead of stacking them.
