Cabbage Soup

Here’s a simple, hearty, and healthy Cabbage Soup recipe — cozy, budget-friendly, and great for meal prep or light detox meals.


🥣 Cabbage Soup Recipe

🛒 Ingredients (Serves 6–8):

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • ½ head of green cabbage, chopped

  • 1 zucchini (optional), chopped

  • 1 can (14.5 oz) diced tomatoes

  • 6 cups vegetable broth (or chicken broth)

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • ½ teaspoon black pepper

  • Salt to taste

  • 1–2 teaspoons lemon juice or a splash of vinegar (optional, for brightness)

  • Fresh parsley for garnish


👩‍🍳 Instructions:

  1. Sauté Aromatics:
    Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant, 2–3 minutes.

  2. Add Veggies:
    Stir in carrots, celery, and zucchini. Cook for 5 minutes.

  3. Add Cabbage & Broth:
    Add chopped cabbage, diced tomatoes (with juices), broth, thyme, paprika, salt, and pepper.

  4. Simmer:
    Bring to a boil, then reduce heat. Cover and simmer for 25–30 minutes, or until vegetables are tender.

  5. Finish & Serve:
    Add lemon juice or vinegar for brightness. Taste and adjust seasoning. Garnish with chopped parsley.


🍽️ Serving Suggestions:

  • Serve with crusty bread or a sprinkle of Parmesan.

  • Add beans or shredded chicken for extra protein.

  • Great for freezing — lasts up to 3 months in the freezer!
