🐟 Baked Salmon in Foil with Asparagus & Lemon Garlic Butter Sauce
🛒 Ingredients (Serves 2–4):
For the salmon foil packets:

2 salmon fillets (skin-on or off, ~6 oz each)

1 bunch of asparagus (trimmed)

2 tablespoons olive oil

Salt & freshly cracked black pepper

Lemon slices (for garnish)
For the lemon garlic butter sauce:

3 tablespoons unsalted butter (melted)

2 cloves garlic (minced)

Juice of ½ lemon

Zest of ½ lemon

1 tablespoon fresh chopped parsley (or dill)
👩🍳 Instructions:
1. Preheat Oven

Preheat to 400°F (200°C).
2. Prepare Foil Packets

Tear two large pieces of aluminum foil (or parchment paper).

Place asparagus in the center of each foil, drizzle with olive oil, and season with salt and pepper.

Lay a salmon fillet on top of the asparagus.
3. Make the Sauce

In a bowl, mix melted butter, garlic, lemon juice, zest, and parsley.
4. Assemble Packets

Spoon the lemon garlic butter sauce over each salmon fillet.

Top with 2–3 lemon slices.

Fold the foil over the salmon and seal tightly to create a packet.
5. Bake

Place packets on a baking sheet and bake for 15–18 minutes (depending on thickness of the fillets).

Optionally, open the packets for the last 2–3 minutes and broil for a lightly golden top.
6. Serve

Carefully open the foil (watch the steam!).
