Here’s a foolproof recipe for Crispy Baked Chicken Wings—golden, crunchy, and packed with flavor, without deep frying! Perfect for game day, parties, or weeknight cravings.

🧾 Ingredients:

  • 2–3 lbs chicken wings (split into flats and drumettes, tips removed)

  • 1 tbsp baking powder (NOT baking soda – this is the crisping secret!)

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp paprika (optional for color)

  • ½ tsp black pepper

  • Optional: pinch of cayenne for heat


👩‍🍳 Instructions:

1. Prep the Wings:

  • Pat wings completely dry with paper towels. Moisture is the enemy of crispiness.

2. Coat:

  • In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, paprika, and any other seasonings.

3. Arrange:

  • Line a baking sheet with foil and place a wire rack on top.

  • Arrange wings in a single layer on the rack for maximum air flow and crispiness.

4. Bake:

  • Bake at 250°F (120°C) for 30 minutes (this renders the fat).

  • Then raise the temperature to 425°F (220°C) and bake another 40–45 minutes until golden and crispy, flipping halfway through.

5. Serve:

  • Serve as-is or toss in your favorite sauce:

    • Buffalo

    • Honey garlic

    • BBQ

    • Lemon pepper butter

    • Garlic parmesan


🧠 Tips for Success:

  • Baking powder helps the skin crisp by raising pH and drying it out.

  • Don’t overcrowd the pan—air circulation is key.

  • Want them extra crispy? Broil for the last 2–3 minutes, but watch closely.
