🍗 Chicken and Potato Bake
Ingredients

4 bone-in, skin-on chicken thighs (or breasts or drumsticks)

4 medium potatoes, peeled and chopped into chunks

1 medium onion, sliced

3–4 garlic cloves, minced

3 tbsp olive oil
-
1 tsp paprika
-
1 tsp dried thyme or rosemary
-
½ tsp garlic powder
-
Salt and pepper, to taste

Optional: chopped parsley or grated cheese for topping
Instructions
1. Prep:

Preheat oven to 400°F (200°C).

Lightly grease a large baking dish or roasting pan.
2. Season:

In a large bowl, toss potato chunks and onion slices with half the olive oil, salt, pepper, garlic powder, and herbs.

Place them evenly in the baking dish.

Rub chicken with remaining oil, paprika, salt, pepper, and minced garlic. Lay chicken pieces on top of the potatoes.
3. Bake:

Cover with foil and bake for 40 minutes.

Remove foil, baste chicken with pan juices, and bake uncovered for another 20–25 minutes, or until the chicken is golden and cooked through (internal temp should reach 165°F / 75°C).
4. Optional Finish:

Sprinkle grated cheese on top during the last 5 minutes of baking for a cheesy version.

Garnish with fresh parsley or thyme before serving.
