Chicken and Potato Bake

Here’s a hearty and comforting Chicken and Potato Bake recipe that’s simple, flavorful, and perfect for a family dinner:


🍗 Chicken and Potato Bake

Ingredients

  • 4 bone-in, skin-on chicken thighs (or breasts or drumsticks)

  • 4 medium potatoes, peeled and chopped into chunks

  • 1 medium onion, sliced

  • 3–4 garlic cloves, minced

  • 3 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp dried thyme or rosemary

  • ½ tsp garlic powder

  • Salt and pepper, to taste

  • Optional: chopped parsley or grated cheese for topping


Instructions

1. Prep:

  • Preheat oven to 400°F (200°C).

  • Lightly grease a large baking dish or roasting pan.

2. Season:

  • In a large bowl, toss potato chunks and onion slices with half the olive oil, salt, pepper, garlic powder, and herbs.

  • Place them evenly in the baking dish.

  • Rub chicken with remaining oil, paprika, salt, pepper, and minced garlic. Lay chicken pieces on top of the potatoes.

3. Bake:

  • Cover with foil and bake for 40 minutes.

  • Remove foil, baste chicken with pan juices, and bake uncovered for another 20–25 minutes, or until the chicken is golden and cooked through (internal temp should reach 165°F / 75°C).

4. Optional Finish:

  • Sprinkle grated cheese on top during the last 5 minutes of baking for a cheesy version.

  • Garnish with fresh parsley or thyme before serving.
