✅ Ingredients:

2 large russet or Yukon gold potatoes, thinly sliced (~1/8 inch thick)

2 tbsp butter

2 tbsp all-purpose flour

1 cup milk (whole milk or half-and-half preferred)

½ cup heavy cream (optional but makes it richer)

1 cup shredded cheddar cheese
-
½ cup Parmesan cheese, grated
-
½ tsp garlic powder
-
Salt and pepper, to taste

Optional: chopped chives, thyme, or paprika for garnish
🔥 Instructions:
1. Preheat Air Fryer:
Set to 350°F (175°C).
2. Make the Sauce:

In a saucepan over medium heat, melt butter.

Stir in flour to make a roux; cook 1–2 minutes.

Slowly whisk in milk (and cream if using). Stir constantly until thickened.

Add garlic powder, salt, pepper, and both cheeses. Stir until melted and smooth.
3. Assemble Potatoes:

In a greased, air fryer-safe baking dish (metal or silicone), layer half the potatoes.

Pour half the cheese sauce over the layer.

Repeat with remaining potatoes and cheese sauce.
4. Air Fry:

Cover the dish with foil.

Air fry at 350°F for 25 minutes.

Remove foil and air fry another 10–15 minutes, until golden and bubbly on top and potatoes are fork-tender.
5. Rest & Serve:

Let sit for 5–10 minutes before serving. Garnish with herbs or paprika if desired.

For crispier edges, broil (or increase air fryer temp to 400°F) for the last 2–3 minutes.
