Stuffed Meatloaf

Here’s a hearty, flavorful twist on a classic comfort food: Stuffed Meatloaf! It’s juicy ground beef wrapped around a savory filling — cheesy, veggie-packed, or even bacon-laced — and baked to perfection.


🥩 Stuffed Meatloaf Recipe

Base Ingredients:

  • 2 lbs ground beef (80/20 is ideal)

  • 1 cup breadcrumbs

  • 2 eggs

  • 1/2 cup milk

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper


🧀 Suggested Filling (Cheese & Spinach version):

  • 1 cup shredded mozzarella or cheddar cheese

  • 1 cup fresh spinach (sautéed and drained)

  • Optional: 1/4 cup cooked crumbled bacon or sautéed mushrooms


🍅 Topping:

  • 1/4 cup ketchup

  • 2 tbsp brown sugar

  • 1 tsp mustard (optional)


🔧 Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil or use a loaf pan.

  2. Mix meatloaf base: In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, Worcestershire, salt, and pepper. Mix until just combined — don’t overmix.

  3. Shape and stuff:

    • On a piece of parchment or foil, flatten the meat mixture into a rectangle (about 10×14 inches).

    • Spread your filling over the center, leaving a 1-inch border.

    • Carefully roll it up like a jelly roll, sealing the edges and ends tightly.

  4. Transfer to baking pan seam-side down. Mix the topping ingredients and spread over the top.

  5. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).

  6. Rest for 10 minutes before slicing. This helps keep the juices in.


🔄 Variations:

  • Italian-style: Fill with provolone, pepperoni, and marinara.

  • BBQ twist: Add BBQ sauce to the topping and cheddar + caramelized onions inside.

  • Low-carb: Swap breadcrumbs for almond flour or crushed pork rinds.
