Here’s a cozy, protein-packed, and satisfying breakfast (or anytime snack): Jammy Eggs on Toast — with eggs cooked to that perfect in-between stage: not runny, not hard, but deliciously jammy in the center.

🥚 What are Jammy Eggs?

Jammy eggs have firm whites and yolks that are set but still soft, creamy, and slightly sticky — like the texture of jam or fudge.


Ingredients (for 2 servings):

  • 4 large eggs

  • 2 slices of good bread (sourdough, rye, multigrain, etc.)

  • Butter or olive oil (for toast)

  • Salt & pepper to taste

  • Optional toppings:

    • Avocado slices

    • Chili flakes or hot sauce

    • Microgreens, arugula, or herbs

    • Everything bagel seasoning

    • A smear of cream cheese or hummus


⏲️ How to Make Jammy Eggs:

  1. Bring a pot of water to a boil.

  2. Lower the eggs in gently with a spoon.

  3. Boil for exactly 6½ to 7 minutes, depending on your yolk preference (6:30 = softer jammy center; 7 = more set).

  4. Immediately transfer eggs to an ice water bath for at least 5 minutes.

  5. Gently peel the eggs.


🥪 Assemble the Toast:

  1. Toast your bread slices and spread with butter or drizzle with olive oil.

  2. Halve or slice the jammy eggs and layer them over the toast.

  3. Season with salt, pepper, and any optional toppings.

  4. Serve warm, with a fork and a happy sigh 😌


🧠 Tips:

  • Older eggs peel easier than super-fresh ones.

  • Add a splash of vinegar to the boiling water to help with peeling (optional).

  • Great with a swipe of Dijon mustard or pesto under the eggs.
