Instructions:

  1. Preheat the Oven:

    • Set your oven to 110°C (230°F).

    • Lightly grease a 16 cm (6-inch) round cake pan and line the bottom with parchment paper.

  2. Prepare the Egg Yolks Mixture:

    • In a bowl, whisk together the egg yolks, yogurt, lemon zest, and lemon juice until smooth.

    • Sift in the flour and cornstarch, mixing until well combined.

  3. Whip the Egg Whites:

    • In a separate clean bowl, beat the egg whites until foamy.

    • Gradually add the sugar and continue to beat until stiff peaks form.

  4. Combine the Mixtures:

    • Gently fold the whipped egg whites into the egg yolk mixture in three additions, being careful not to deflate the batter.

  5. Bake the Cake:

    • Pour the batter into the prepared cake pan.

    • Place the cake pan in a larger pan filled with hot water to create a water bath.
