🍓 Air Fryer Vanilla Berry Pavlova
Ingredients:
For the Pavlova:

3 large egg whites (room temperature)

1 cup (200g) granulated sugar

1 tsp lemon juice

1 tsp vanilla extract
For the Whipped Cream:

1 cup (230ml) heavy or double cream

½ cup (60g) powdered sugar

1 tsp vanilla extract
For the Topping:

1 cup (150–180g) fresh berries (strawberries, raspberries, blueberries)

Optional: 2 tbsp lemon or orange curd
Instructions:
1. Prepare the Pavlova:

Preheat your air fryer to 250°F (120°C). Line the air fryer basket with parchment paper.

In a clean, dry bowl, beat the egg whites until soft peaks form.

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff, glossy peaks form.

Gently fold in the lemon juice and vanilla extract.

Spoon the meringue onto the prepared parchment paper, forming a round base with a slight indentation in the center to hold the toppings later.
2. Bake the Pavlova:

Place the meringue in the preheated air fryer basket.

Bake at 250°F (120°C) for 20 minutes, then reduce the temperature to 200°F (95°C) and bake for an additional 1 hour and 10 minutes, or until the meringue is crisp on the outside and dry to the touch.

Turn off the air fryer and allow the pavlova to cool completely inside with the door slightly ajar.
3. Prepare the Whipped Cream:

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
4. Assemble the Pavlova:

Once the pavlova has cooled, carefully transfer it to a serving platter.

Fill the center with the whipped cream.

Top with fresh berries and, if desired, a drizzle of lemon or orange curd.
