Here’s a rich and hearty recipe for Cheesy Mushroom Beef — a comforting skillet or casserole-style dish loaded with savory ground beef, mushrooms, and melted cheese. Perfect over pasta, rice, or mashed potatoes, and great for weeknight dinners.


🧀 Cheesy Mushroom Beef

Ingredients:

  • 1 lb ground beef

  • 8 oz fresh mushrooms, sliced (white or cremini)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream or cream cheese

  • 1 cup shredded cheddar or mozzarella cheese (or a blend)

  • 1 tsp Worcestershire sauce

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp paprika or dried thyme (optional)

  • 1 tbsp olive oil or butter


Instructions:

1. Cook the Beef:

  • In a large skillet over medium heat, cook the ground beef until browned.

  • Drain excess fat and set aside.

2. Sauté the Veggies:

  • In the same skillet, add olive oil or butter.

  • Sauté onions and mushrooms until softened and lightly browned, about 5–7 minutes.

  • Add garlic and cook for another 30 seconds.

3. Make It Creamy:

  • Return the cooked beef to the skillet.

  • Stir in cream of mushroom soup, sour cream (or cream cheese), Worcestershire sauce, and seasonings.

  • Simmer for 5–10 minutes, stirring occasionally, until hot and bubbly.

4. Add Cheese:

  • Sprinkle shredded cheese over the top.

  • Cover and let sit for 2–3 minutes to melt, or place under a broiler for 1–2 minutes for a golden top.


📝 Serving Suggestions:

  • Serve over egg noodles, mashed potatoes, rice, or even on toasted bread as an open-faced sandwich.

  • Garnish with fresh parsley or a sprinkle of Parmesan.


🔄 Variations:

  • Casserole Style: Pour into a baking dish, top with extra cheese, and bake at 375°F (190°C) for 15–20 minutes.

  • Add Veggies: Toss in some peas, green beans, or chopped spinach.

  • Spicy Version: Add a pinch of red pepper flakes or use pepper jack cheese.
