Company Chicken Casserole

Posted on May 30, 2025

Here’s a classic and crowd-pleasing Company Chicken Casserole — creamy, comforting, and perfect for guests or weeknight dinners. It uses simple ingredients but tastes like something special.

🍗 Company Chicken Casserole

Ingredients:

  • 3 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
  • 2 cups cooked white or wild rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • ½ cup mayonnaise (optional, for extra creaminess)
  • 1 cup shredded cheddar or Swiss cheese
  • ½ cup milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • 1 cup buttery cracker crumbs (like Ritz) or seasoned breadcrumbs
  • 2–3 tbsp melted butter

Instructions:

1. Preheat Oven:

  • Preheat to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Mix the Filling:

  • In a large bowl, combine cooked chicken, cooked rice, soup, sour cream, mayonnaise (if using), milk, garlic powder, onion powder, cheese, salt, and pepper.
  • Mix until well blended.

3. Assemble:

  • Pour the mixture into the prepared baking dish and spread evenly.

4. Add Topping:

  • In a small bowl, mix cracker or breadcrumb crumbs with melted butter.
  • Sprinkle evenly over the top of the casserole.

5. Bake:

  • Bake uncovered for 30–35 minutes, or until hot and bubbly and the topping is golden brown.

📝 Make-Ahead & Tips:

  • Can be assembled a day ahead and refrigerated (just add 10–15 minutes to the bake time).
  • Add steamed broccoli, peas, or mushrooms for a veggie boost.
  • Serve with a green salad or rolls for a full meal.

Let me know if you’d like a version without canned soup, gluten-free, or one using pasta instead of rice!
