Cheesy Mashed Potato Puffs

Here’s a fun and tasty recipe for Cheesy Mashed Potato Puffs — crispy on the outside, creamy and cheesy on the inside. They’re perfect for using up leftover mashed potatoes or serving as a bite-sized appetizer or side dish.


🧀 Cheesy Mashed Potato Puffs

Ingredients (makes about 12 puffs):

  • 2 cups cold mashed potatoes (leftovers work great!)

  • 1 large egg

  • ½ cup shredded cheddar cheese (or your favorite melty cheese)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp chopped chives or green onions

  • Salt & pepper to taste

  • Optional: 2–3 tbsp sour cream or cream cheese (for extra creaminess)

  • Optional topping: more shredded cheese or a sprinkle of paprika


Instructions:

1. Preheat the Oven:

  • Preheat to 400°F (200°C).

  • Lightly grease a muffin tin (mini or regular size) or use silicone liners for easy removal.

2. Mix the Ingredients:

  • In a bowl, combine mashed potatoes, egg, cheddar, Parmesan, chives, and seasonings.

  • Stir until well blended. Add sour cream or cream cheese if the mixture feels too stiff.

3. Fill the Muffin Tin:

  • Spoon the mixture into the prepared tin, filling each cup about ¾ full.

  • Optional: Sprinkle a bit of cheese or paprika on top for a golden finish.

4. Bake:

  • Bake for 20–25 minutes (15–20 for mini muffins), or until puffed and golden brown on top.

  • Let cool for a few minutes before removing from the tin — they firm up as they cool.


📝 Serving Tips:

  • Serve with sour cream, ranch, or a spicy dipping sauce.

  • Great as a holiday side, party appetizer, or lunchbox treat.
