Here’s a Best Ever Beef Stew recipe — rich, hearty, and deeply comforting. It features tender chunks of beef, melt-in-your-mouth vegetables, and a savory broth that’s slow-simmered to perfection. Great for chilly nights or make-ahead meals!


🍲 Best Ever Beef Stew

Ingredients:

  • 2.5 to 3 lbs beef chuck roast, cut into 1½-inch cubes

  • 3 tablespoons olive oil, divided

  • Salt and black pepper, to taste

  • 1/4 cup all-purpose flour (for dredging)

  • 1 large yellow onion, chopped

  • 3 cloves garlic, minced

  • 3 tablespoons tomato paste

  • 1 cup dry red wine (or beef broth)

  • 4 cups beef broth (low sodium recommended)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 2 bay leaves

  • 4 carrots, peeled and cut into 1-inch pieces

  • 4 Yukon Gold potatoes, peeled and cut into chunks

  • 2 celery stalks, sliced

  • 1 cup frozen peas (add at end)

  • Fresh parsley, chopped (for garnish)


🔥 Instructions:

1. Brown the beef:

  • Pat the beef dry and season with salt and pepper.

  • Lightly dredge in flour.

  • Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

  • Sear beef in batches until browned on all sides. Don’t overcrowd. Remove and set aside.

2. Sauté aromatics:

  • Add remaining 1 tablespoon oil to the pot.

  • Sauté onions until softened (about 5 minutes).

  • Stir in garlic and tomato paste; cook for 1–2 minutes more.

3. Deglaze & build the broth:

  • Pour in wine to deglaze the pan, scraping up the browned bits.

  • Simmer for 2–3 minutes to reduce slightly.

  • Stir in beef broth, Worcestershire, thyme, rosemary, and bay leaves.

4. Simmer the stew:

  • Return the beef to the pot.

  • Bring to a simmer, then cover and reduce heat to low.

  • Simmer for 1.5 to 2 hours, or until the beef is fork-tender.

5. Add vegetables:

  • Add carrots, potatoes, and celery.

  • Simmer uncovered for another 30–40 minutes, until vegetables are soft and stew is thickened.

6. Finish & serve:

  • Stir in frozen peas and cook for 5 minutes.

  • Remove bay leaves. Adjust salt and pepper to taste.

  • Garnish with fresh parsley and serve with crusty bread.


✅ Tips for Best Results:

  • Use chuck roast: It becomes buttery soft with slow cooking.

  • Don’t rush it: Low and slow yields the most tender meat and rich flavor.

  • Make ahead: It’s even better the next day after the flavors deepen!
