ITALIAN DRUNKEN NOODLES

Italian Drunken Noodles is a fusion-style pasta dish inspired by Thai drunken noodles but with a rich Italian twist. It usually includes Italian sausage, bell peppers, onions, garlic, and tomatoes, all simmered with white wine and tossed with wide noodles like pappardelle or fettuccine. Here’s a flavorful recipe you can try:


🍝 Italian Drunken Noodles Recipe

🧄 Ingredients:

  • 8 oz pappardelle or fettuccine (wide noodles)

  • 1 tbsp olive oil

  • 1 lb Italian sausage (hot or mild), casings removed

  • 1 medium yellow onion, thinly sliced

  • 3 cloves garlic, minced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1/2 cup dry white wine (like Pinot Grigio)

  • 1 can (14.5 oz) diced tomatoes (with juices)

  • 1/4 cup fresh basil, chopped

  • Salt and pepper, to taste

  • Grated Parmesan cheese, for garnish


🍷 Instructions:

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.

  2. Sauté the Sausage
    In a large skillet or sauté pan, heat olive oil over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage and set aside.

  3. Cook the Veggies
    In the same pan, add a bit more oil if needed. Sauté onion, garlic, and bell peppers until softened, about 5-7 minutes. Add crushed red pepper flakes for heat, if using.

  4. Deglaze with Wine
    Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes until reduced slightly.

  5. Add Tomatoes & Simmer
    Stir in diced tomatoes with juices and return the cooked sausage to the pan. Let everything simmer together for about 5 minutes. Season with salt and pepper to taste.

  6. Combine with Pasta
    Toss in the cooked pasta and gently combine until everything is well coated. Add chopped basil and cook for another minute.

  7. Serve
    Serve hot, topped with freshly grated Parmesan cheese and extra basil if desired.


📝 Tips:

  • Substitute chicken sausage for a lighter option.

  • For a spicy kick, increase the red pepper flakes or use spicy Italian sausage.

  • Add spinach or arugula at the end for a green touch.
