🍝 Italian Drunken Noodles Recipe

🧄 Ingredients:

8 oz pappardelle or fettuccine (wide noodles)

1 tbsp olive oil

1 lb Italian sausage (hot or mild), casings removed

1 medium yellow onion, thinly sliced

3 cloves garlic, minced
-
1 red bell pepper, sliced
-
1 yellow bell pepper, sliced
-
1/2 tsp crushed red pepper flakes (optional)
-
1/2 cup dry white wine (like Pinot Grigio)

1 can (14.5 oz) diced tomatoes (with juices)

1/4 cup fresh basil, chopped
-
Salt and pepper, to taste

Grated Parmesan cheese, for garnish
🍷 Instructions:

Cook the Pasta
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside. -
Sauté the Sausage
In a large skillet or sauté pan, heat olive oil over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage and set aside. -
Cook the Veggies
In the same pan, add a bit more oil if needed. Sauté onion, garlic, and bell peppers until softened, about 5-7 minutes. Add crushed red pepper flakes for heat, if using. -
Deglaze with Wine
Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes until reduced slightly. -
Add Tomatoes & Simmer
Stir in diced tomatoes with juices and return the cooked sausage to the pan. Let everything simmer together for about 5 minutes. Season with salt and pepper to taste. -
Combine with Pasta
Toss in the cooked pasta and gently combine until everything is well coated. Add chopped basil and cook for another minute. -
Serve
Serve hot, topped with freshly grated Parmesan cheese and extra basil if desired.
