Here’s a classic French fries recipe that gives you perfectly crispy fries on the outside and soft on the inside — just like at your favorite restaurant!


🍟 Homemade French Fries (Frites Maison)

🧂 Ingredients (Serves 4)

  • 4 large russet potatoes (or Bintje for an authentic French version)

  • Vegetable oil (for frying — canola, peanut, or sunflower oil)

  • Salt (to taste)

  • Optional: garlic powder, paprika, or herbs for seasoning


👨‍🍳 Instructions

1. Prep the Potatoes

  • Peel (optional) and cut potatoes into even baton-style strips (about 1 cm or ½ inch thick).

  • Rinse the fries under cold water to remove excess starch.

  • Soak in cold water for at least 30 minutes (or up to overnight in the fridge).

  • Drain and pat completely dry with a towel — this is essential for crispiness and safety when frying.

2. First Fry (Blanching)

  • Heat oil to 300°F (150°C) in a deep fryer or large heavy pot.

  • Fry the potatoes in batches for 4–5 minutes, until soft but not browned.

  • Remove and drain on paper towels.

  • Let them cool (you can refrigerate or freeze them briefly at this stage for extra crispiness later).

3. Second Fry (Crisping)

  • Increase oil temperature to 375°F (190°C).

  • Fry the blanched potatoes again in batches until golden and crispy, about 2–3 minutes.

  • Drain on paper towels, and immediately season with salt (and other desired spices).


🍽️ Serving Suggestions

  • Serve with ketchup, aioli, mayonnaise, or cheese sauce.

  • Pair with burgers, steak, or grilled veggies.


🔄 Optional Variations

  • Baked version: Toss with oil, bake at 425°F (220°C) for 30–40 minutes, flipping halfway.

  • Air fryer: 375°F (190°C) for 20–25 minutes, shaking every 5–7 minutes.

  • Seasoned fries: Add paprika, garlic powder, cayenne, or truffle salt.
