Here’s a mouthwatering recipe for a Chicken Parmesan Grilled Cheese Sandwich β€” crispy, cheesy, and loaded with Italian flavor. It’s the best parts of chicken parm and grilled cheese, all in one bite!

Ingredients

For the Chicken:

  • 1 small chicken breast (or 1 cup cooked shredded chicken)

  • Salt & pepper, to taste

  • 1/4 tsp garlic powder

  • 1/4 cup flour

  • 1 egg, beaten

  • 1/2 cup breadcrumbs (Italian-style or plain with seasoning)

  • 2 tbsp grated Parmesan cheese

  • Olive oil, for pan-frying

For the Sandwich:

  • 4 slices of thick bread (sourdough or Italian work great)

  • 1/2 cup marinara or pizza sauce

  • 1 cup shredded mozzarella (or slices)

  • 2 tbsp butter (softened)

  • Optional: fresh basil or extra Parmesan for garnish


Instructions

1. Prepare the Chicken

  • Slice chicken breast thin or pound to even thickness.

  • Season with salt, pepper, and garlic powder.

  • Dredge chicken in flour β†’ dip in beaten egg β†’ coat in breadcrumbs mixed with Parmesan.

  • Heat olive oil in a pan and cook chicken until golden and cooked through (~3–4 minutes per side). Let rest, then slice or cut to fit your bread.

2. Assemble the Sandwich

  • Spread butter on the outside of each bread slice.

  • On the unbuttered side: layer mozzarella, chicken cutlet slices, a spoonful of marinara, more mozzarella, and top with the second slice of bread.

3. Grill the Sandwich

  • Heat a skillet over medium heat.

  • Place sandwiches buttered-side down and cook 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.


Serving Suggestions

  • Serve with warm marinara for dipping

  • Add a side salad or crispy fries

  • Garnish with chopped basil or more Parmesan
