Custard Ice Cream Recipe

Absolutely! 🍨 Custard Ice cream is the creamiest kind — richer than regular ice cream because it’s made with egg yolks, which give it a silky, luxurious texture. Here’s a classic vanilla custard ice cream recipe you can make at home (with or without an ice cream maker!).


🍦 Classic Custard Ice Cream (Vanilla Bean)

đź›’ Ingredients:

  • 2 cups heavy cream

  • 1 cup whole milk

  • Âľ cup granulated sugar

  • 5 large egg yolks

  • 1 whole vanilla bean, split (or 2 tsp vanilla extract)

  • Pinch of salt


👩‍🍳 Instructions:

1. Heat the Milk & Cream

  • In a saucepan, combine heavy cream, milk, and half the sugar.

  • Add the vanilla bean seeds (scrape from the pod) and the pod itself.

  • Heat over medium, stirring, until just steaming (don’t boil). Then remove from heat.

2. Whisk Egg Yolks

  • In a bowl, whisk together the egg yolks, remaining sugar, and a pinch of salt until pale and creamy.

3. Temper the Yolks

  • Slowly pour a little of the warm cream mixture into the yolks while whisking constantly to temper them (so they don’t scramble).

  • Gradually add more of the cream, whisking, then pour everything back into the saucepan.

4. Cook the Custard

  • Cook over low to medium heat, stirring constantly with a wooden spoon or spatula, until it thickens slightly and coats the back of the spoon. This happens around 170–175°F (77–80°C).

  • Do not let it boil!

5. Strain & Cool

  • Remove from heat and strain through a fine sieve into a clean bowl to catch any curdled bits or vanilla pod.

  • Let cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

6. Churn the Ice Cream

  • Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).

  • Transfer to a container and freeze for a few hours to firm up.

❄️ No ice cream maker? Pour into a freezer-safe dish and stir every 30–60 minutes for the first few hours to break up ice crystals.


🍓 Customize It:

  • Stir in fruit purees, chocolate chips, cookie chunks, or caramel swirls just before freezing.

  • Add a touch of liqueur (like rum or KahlĂşa) to enhance flavor and improve scoopability.
