🛒 Ingredients:

2 medium zucchini, cut into fries (about 3–4 inches long, ½ inch thick)

2 large eggs

¾ cup panko breadcrumbs (or crushed pork rinds for keto)

¼ cup grated Parmesan cheese

½ tsp garlic powder

½ tsp paprika

Salt and pepper, to taste

Optional: chopped parsley or Italian seasoning

1. Preheat Oven

Preheat to 425°F (220°C).

Line a baking sheet with parchment paper or a wire rack for extra crispiness. Lightly oil or spray it.
2. Prep the Dredging Station

In one bowl: beat the eggs.

In another: mix the panko, Parmesan, garlic powder, paprika, salt, and pepper.
3. Coat the Zucchini

Dip each zucchini fry into the egg, then press into the breadcrumb mixture until well coated.

Place them on the baking sheet in a single layer without crowding.
4. Bake

Bake for 20–25 minutes, flipping halfway, until golden and crispy.
