π₯ Crockpot Beef Tips and Noodles
π§Ύ Ingredients:

2 lbs beef stew meat or sirloin tips, cut into bite-size chunks

1 onion, chopped

2 cloves garlic, minced

2 cups beef broth
-
1 tbsp Worcestershire sauce
-
1 tbsp soy sauce (adds umami)
-
1 tsp dried thyme or Italian seasoning
-
Β½ tsp black pepper
-
1 (10.5 oz) can cream of mushroom soup (optional, for a creamier gravy)

1 tbsp cornstarch + 2 tbsp cold water (to thicken, if needed)

12 oz egg noodles, cooked according to package instructions

Fresh parsley or chives (optional garnish)
π₯ Instructions:
1. Assemble in Crockpot

Add beef, onion, garlic, beef broth, Worcestershire sauce, soy sauce, thyme, pepper, and mushroom soup (if using) into the slow cooker.

Stir gently to combine.
2. Cook Low and Slow

Cover and cook on LOW for 7β8 hours or HIGH for 4β5 hours, until beef is fork-tender.
3. Thicken the Gravy

If the sauce is too thin, mix 1 tbsp cornstarch with 2 tbsp cold water.

Stir into the crockpot and cook on HIGH for another 15β20 minutes, until thickened.
4. Cook the Noodles

Cook egg noodles according to package directions. Drain and toss with a little butter.
5. Serve

Spoon beef and gravy over the noodles.

Garnish with chopped parsley or chives, if desired.

Add sliced mushrooms or peas during the last hour for extra flavor and texture.

No cream of mushroom? Just leave it out β the broth and seasoning still create a rich gravy.
