🧀 Cheesy Mashed Potato Puffs
Ingredients (makes about 12 puffs):

2 cups mashed potatoes (preferably cold/leftover)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

2 large eggs

1/4 cup milk or sour cream

1/4 cup chopped green onions or chives (optional)

Salt and pepper to taste

1/2 tsp garlic powder (optional)

1/4 cup grated Parmesan cheese (for topping)
🧁 Instructions:
1. Preheat Oven:

Preheat to 400°F (200°C).

Grease a 12-cup muffin tin well or use silicone liners.
2. Mix the batter:

In a large bowl, combine mashed potatoes, eggs, milk or sour cream, shredded cheese, herbs, and seasonings.

Stir until well mixed.
3. Fill and top:

Spoon mixture into the muffin cups, filling each about 3/4 full.

Sprinkle with Parmesan cheese for a crispy golden top.
4. Bake:
