Doughnuts

Here’s a classic recipe for homemade doughnuts—soft, fluffy, and fried to golden perfection. These are the yeasted, bakery-style doughnuts that you can glaze, sugar, or fill however you like!


🍩 Classic Yeast Doughnuts

Ingredients:

For the dough:

  • 2¼ tsp (1 packet) active dry yeast

  • ¾ cup (180 ml) warm milk (about 110°F / 43°C)

  • ¼ cup (50 g) granulated sugar

  • 2½ cups (315 g) all-purpose flour (plus more for dusting)

  • ¼ tsp salt

  • 2 tbsp (28 g) unsalted butter, softened

  • 1 large egg

  • 1 tsp vanilla extract

  • Vegetable oil, for frying

Optional toppings:

  • Granulated sugar or cinnamon sugar

  • Chocolate glaze (see below)

  • Classic vanilla glaze

  • Powdered sugar

  • Jam, custard, or Nutella for filling


🧑‍🍳 Instructions:

1. Activate the Yeast:

  • In a small bowl, mix warm milk and sugar. Sprinkle yeast on top and let sit for 5–10 minutes until foamy.

2. Make the Dough:

  • In a large bowl, combine flour and salt.

  • Add yeast mixture, egg, vanilla, and butter. Mix until a soft dough forms.

  • Knead on a floured surface for 6–8 minutes until smooth and elastic, or use a stand mixer with a dough hook for about 5 minutes.

  • Place dough in a greased bowl, cover, and let rise in a warm spot until doubled in size (about 1–1.5 hours).

3. Shape the Doughnuts:

  • Roll out the dough to about ½ inch thick.

  • Cut out doughnuts using a doughnut cutter or 3-inch round cutter and a smaller one for the center.

  • Place on parchment-lined trays, cover loosely, and let rise again for 30–45 minutes.

4. Fry the Doughnuts:

  • Heat oil in a heavy pot to 350°F (175°C).

  • Fry 2–3 at a time for 1–2 minutes per side, until golden brown.

  • Drain on paper towels and let cool slightly before glazing or sugaring.


🍫 Chocolate Glaze (Optional):

  • ½ cup (90 g) chocolate chips

  • 2 tbsp butter

  • 1 tbsp corn syrup or honey

  • 2 tbsp milk
    Melt all together and dip the top of doughnuts.


🍯 Classic Vanilla Glaze (Optional):

  • 1 cup (120 g) powdered sugar

  • 2–3 tbsp milk

  • ½ tsp vanilla extract
    Whisk until smooth and drizzle or dip.


📝 Tips:

  • For baked doughnuts, use a doughnut pan and bake at 350°F (175°C) for 10–12 minutes.
