For the Fried Rice:

  • 3 cups cooked rice (preferably day-old and cold)
  • 2 tbsp vegetable oil (divided)
  • 2 eggs, lightly beaten
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots (or any mixed vegetables)
  • 2–3 tbsp soy sauce (to taste)
  • 1 tbsp oyster sauce (optional, for depth)
  • 1 tsp sesame oil (optional)
  • 2 green onions, chopped

1. Marinate the Beef

  • Mix beef with soy sauce, cornstarch, sesame oil, and pepper. Let sit for 10–15 minutes while prepping other ingredients.

2. Cook the Eggs

  • Heat 1 tsp oil in a large wok or skillet over medium heat. Scramble the eggs quickly until just set. Remove and set aside.

3. Sear the Beef

  • Increase heat to medium-high. Add 1 tbsp oil and cook beef for 1–2 minutes until browned. Remove and set aside.

4. Stir-Fry Veggies

  • In the same pan, add a bit more oil if needed. SautΓ© onion for 1–2 minutes.
  • Add garlic and frozen vegetables. Stir-fry until heated through and fragrant (about 3 minutes).

5. Add Rice & Combine

  • Add rice and break up clumps. Stir-fry for 2–3 minutes until heated through.
  • Return eggs and beef to the pan. Add soy sauce, oyster sauce, and sesame oil.
  • Toss everything well until evenly coated and hot.

6. Finish & Serve

  • Sprinkle with chopped green onions.
  • Serve hot with chili sauce or extra soy sauce if desired.
