🍗 Roasted Chicken Drumsticks with Creamy Mushroom Veggies, Steamed Pumpkin & Spiced Cucumber Salad


🔹 1. Roasted Chicken Drumsticks

📝 Ingredients:

  • 6–8 chicken drumsticks

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp thyme (or rosemary)

  • Salt & pepper to taste

  • Juice of 1/2 lemon (optional)

🔥 Instructions:

  1. Preheat oven to 200°C (400°F).

  2. Toss drumsticks with oil, spices, salt, and pepper.

  3. Place on a baking tray with parchment paper.

  4. Roast for 35–40 minutes, turning halfway, until skin is crispy and internal temp hits 75°C (165°F).

  5. Squeeze lemon over before serving if desired.


🔹 2. Creamy Mushroom Veggies

📝 Ingredients:

  • 1 tbsp butter or olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 ½ cups mushrooms, sliced

  • 1 zucchini or 1 cup green beans, chopped

  • ½ cup heavy cream or coconut cream

  • Salt, pepper, and thyme or parsley

🍳 Instructions:

  1. Sauté onion and garlic in butter until soft.

  2. Add mushrooms and cook until browned.

  3. Stir in other vegetables; sauté 3–4 min.

  4. Pour in cream, season, and simmer for 5–6 minutes until thick and velvety.


🔹 3. Steamed Pumpkin

📝 Ingredients:

  • 2–3 cups pumpkin, peeled and cubed

  • Salt and a touch of nutmeg or cinnamon (optional)

🍲 Instructions:

  1. Steam pumpkin for 8–10 minutes until fork-tender.

  2. Season lightly with salt and a sprinkle of spice if desired.


🔹 4. Spiced Cucumber Salad

📝 Ingredients:

  • 1 large cucumber, thinly sliced

  • 2 tbsp rice vinegar or lemon juice

  • 1 tsp sugar or honey

  • 1/4 tsp chili flakes

  • Pinch of salt

  • Fresh mint or cilantro (optional)

🥗 Instructions:

  1. Mix vinegar, sugar, chili flakes, and salt.

  2. Toss with cucumber slices and herbs.

  3. Let marinate in the fridge for 10–15 minutes.


🍽️ To Serve

  • Plate 2 drumsticks per person.

  • Add a scoop of creamy mushrooms, a side of soft pumpkin, and chilled cucumber salad.

  • Optional: Serve with warm rice or bread to soak up the sauce.
