🧾 Ingredients (Makes 2 sandwiches)
For the Chicken:
-
1 cooked chicken breast, shredded or sliced (or use store-bought rotisserie chicken or chicken tenders)
-
1/2 cup marinara sauce
-
1/4 tsp garlic powder
-
Salt & pepper to taste
-
Optional: 1 tbsp grated Parmesan cheese
For the Sandwich:
-
4 slices of hearty bread (sourdough, Italian, or French bread work well)
-
1 cup shredded mozzarella cheese (or use sliced)
-
1/4 cup grated Parmesan cheese
-
2 tbsp butter, softened
-
Optional: fresh basil or red pepper flakes for garnish
🔥 Instructions
-
Prep the Chicken
In a small skillet, heat the cooked chicken with marinara sauce, garlic powder, and Parmesan (if using). Simmer for 2–3 minutes until heated through and slightly thickened. -
Assemble the Sandwiches
-
Butter one side of each slice of bread.
-
On the unbuttered side, layer mozzarella cheese, the warm chicken mixture, and a bit more cheese (cheese on both sides helps it melt and hold together).
-
Top with the other slice of bread, buttered side facing out.
-
-
Grill the Sandwiches
-
Heat a skillet or griddle over medium heat.
-
Place sandwiches in the pan and cook 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
-
-
Serve
Let rest for 1–2 minutes, then slice and serve hot. Optional: sprinkle with extra Parmesan, basil, or serve with a side of marinara for dipping.
