Here’s a Chicken Parmesan Grilled Cheese Sandwich recipe that’s melty, crispy, and packed with flavor—a fun mashup of two classics!


🧾 Ingredients (Makes 2 sandwiches)

For the Chicken:

  • 1 cooked chicken breast, shredded or sliced (or use store-bought rotisserie chicken or chicken tenders)

  • 1/2 cup marinara sauce

  • 1/4 tsp garlic powder

  • Salt & pepper to taste

  • Optional: 1 tbsp grated Parmesan cheese

For the Sandwich:

  • 4 slices of hearty bread (sourdough, Italian, or French bread work well)

  • 1 cup shredded mozzarella cheese (or use sliced)

  • 1/4 cup grated Parmesan cheese

  • 2 tbsp butter, softened

  • Optional: fresh basil or red pepper flakes for garnish


🔥 Instructions

  1. Prep the Chicken
    In a small skillet, heat the cooked chicken with marinara sauce, garlic powder, and Parmesan (if using). Simmer for 2–3 minutes until heated through and slightly thickened.

  2. Assemble the Sandwiches

    • Butter one side of each slice of bread.

    • On the unbuttered side, layer mozzarella cheese, the warm chicken mixture, and a bit more cheese (cheese on both sides helps it melt and hold together).

    • Top with the other slice of bread, buttered side facing out.

  3. Grill the Sandwiches

    • Heat a skillet or griddle over medium heat.

    • Place sandwiches in the pan and cook 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.

  4. Serve
    Let rest for 1–2 minutes, then slice and serve hot. Optional: sprinkle with extra Parmesan, basil, or serve with a side of marinara for dipping.

  • Crispy Version: Add a few crushed garlic croutons or breadcrumbs inside for a crunch.

  • Spicy Kick: Use spicy arrabbiata sauce or add crushed red pepper.

  • Shortcut: Use frozen chicken tenders or deli chicken cutlets.
