Here’s a cozy and comforting recipe for Easy French Onion Soup — rich, savory, and topped with melty cheese and toasted bread. It’s surprisingly simple to make at home with just a few key ingredients.


🧅 Easy French Onion Soup

Ingredients (Serves 4):

  • 4 large yellow onions, thinly sliced

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 1 tsp sugar (helps caramelize)

  • 2 cloves garlic, minced

  • 1/2 cup dry white wine (optional but adds depth)

  • 4 cups beef broth (or use a mix of beef & chicken broth for lighter flavor)

  • 1 bay leaf

  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)

  • Salt and black pepper to taste

For topping:

  • 4 slices of French baguette

  • 1 to 1 1/2 cups grated Gruyère cheese (or Swiss)


🍲 Instructions:

  1. Caramelize the onions:

    • In a large pot, melt butter with olive oil over medium heat.

    • Add onions, sugar, and a pinch of salt.

    • Cook slowly, stirring often, for 25–30 minutes until golden and deeply caramelized.

  2. Add garlic and wine:

    • Stir in garlic and cook 1 minute.

    • Pour in wine to deglaze the pot, scraping up browned bits. Simmer 2–3 minutes.

  3. Simmer the soup:

    • Add broth, bay leaf, and thyme.

    • Simmer uncovered for 20 minutes. Season with salt and pepper to taste.

    • Remove bay leaf before serving.

  4. Prepare the topping:

    • Toast baguette slices until crisp.

    • Ladle soup into oven-safe bowls. Top each with a toasted slice of bread and plenty of shredded cheese.

  5. Broil to finish:

    • Place bowls on a baking sheet and broil for 2–3 minutes until cheese is melted and bubbly.


✅ Serving Tip:

Serve hot, with extra bread on the side to soak up that rich broth.
