🥒 Simple Cucumber Salad for Dinner
Ingredients (Serves 4):

2 large cucumbers (English or Persian work best), thinly sliced

1/4 small red onion, very thinly sliced

2 tbsp fresh dill, chopped (or 1 tsp dried dill)

3 tbsp white vinegar or apple cider vinegar

1 tbsp olive oil

1 tsp sugar or honey (optional)

Salt and pepper, to taste

Optional: 1/2 cup plain Greek yogurt or sour cream for a creamy version

Prep the cucumbers:

Slice thinly (use a mandoline if you like it extra thin).

If desired, sprinkle with salt and let sit in a colander for 15–20 minutes to draw out excess water (for extra crunch). Pat dry.

Make the dressing:

In a bowl, whisk together vinegar, olive oil, sugar (if using), salt, and pepper.

Stir in dill and red onions.

Toss & chill:

Add cucumbers to the dressing and toss well.

Chill for at least 15 minutes before serving — longer is better to let flavors develop.
