Here’s a savory, comforting recipe for Country Ranch Green Beans ‘n Potatoes with Bacon—a Southern-style side dish (or even a full meal) that’s loaded with smoky bacon, tender potatoes, and ranch-seasoned green beans.


Country Ranch Green Beans ‘n Potatoes with Bacon

Ingredients:

  • 1 lb (450g) baby red or gold potatoes, halved or quartered

  • 1 lb (450g) fresh green beans, trimmed (or use 1–2 cans of drained green beans)

  • 6 slices thick-cut bacon, chopped

  • 1 small onion, diced

  • 1 packet ranch seasoning mix (about 1 oz)

  • 1 tbsp olive oil or butter (optional, for richness)

  • Salt & pepper to taste

  • Optional: 1–2 cloves garlic, minced

  • Optional: red pepper flakes or smoked paprika for heat


Instructions:

  1. Cook the bacon:

    • In a large skillet or Dutch oven, cook chopped bacon over medium heat until crispy.

    • Remove bacon pieces with a slotted spoon and set aside. Leave 1–2 tablespoons of bacon grease in the pan.

  2. Sauté onion & garlic:

    • Add diced onion to the bacon grease and sauté for 3–4 minutes until soft.

    • (Optional) Add garlic and cook another minute.

  3. Add potatoes:

    • Add the potatoes to the pan, season with salt and pepper.

    • Cover and cook over medium-low heat for 10–15 minutes, stirring occasionally, until nearly tender.

  4. Add green beans:

    • Stir in green beans and ranch seasoning mix. Add a splash of water or broth if needed for steam.

    • Cover and cook another 10–15 minutes, until green beans and potatoes are tender.

  5. Finish:

    • Stir in the cooked bacon, taste, and adjust seasoning.

    • For extra flavor, drizzle a bit of olive oil or add a dab of butter before serving.


Tips:

  • You can roast the potatoes and green beans separately in the oven for extra crisp edges, then toss them with the cooked bacon and ranch mix.

  • Add shredded cheddar cheese on top and broil for 2–3 minutes for a cheesy version.
