Classic Meatloaf

Here’s a tried-and-true Classic Meatloaf recipe—moist, flavorful, and topped with a tangy glaze. It’s the kind of comforting dish that brings back family dinner nostalgia.


Classic Meatloaf

Ingredients:

For the meatloaf:
  • 2 lbs (900g) ground beef (80/20 recommended)

  • 1 cup breadcrumbs (plain or Italian-style)

  • 1/2 cup whole milk

  • 2 large eggs

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme (optional)

  • 2 tbsp chopped parsley (optional)

For the glaze:
  • 1/2 cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp apple cider vinegar or white vinegar

  • 1 tsp Dijon mustard (optional)


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with foil or parchment, or use a loaf pan.

  2. Soften the breadcrumbs:

    • In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes to absorb.

  3. Mix the meatloaf:

    • Add the ground beef, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and optional herbs to the breadcrumb mixture.

    • Mix gently with your hands or a spoon until just combined—don’t overmix, or it may become dense.

  4. Shape and bake:

    • Form the mixture into a loaf shape on the baking sheet or press it gently into a loaf pan.

    • Bake for 40 minutes.

  5. Add the glaze:

    • While baking, whisk together glaze ingredients.

    • After 40 minutes, brush the glaze evenly over the meatloaf.

    • Return to oven and bake for an additional 15–20 minutes, or until internal temp reaches 160°F (71°C).

  6. Rest and serve:

    • Let meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or your favorite sides.
