Cheesy Tortilla Meat Bake
Ingredients:

1 lb (450g) ground beef (or ground turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade mix)

1 can (14.5 oz) diced tomatoes (drained)

1/2 cup salsa or enchilada sauce (your choice)

1 can (15 oz) black beans, drained and rinsed (optional)

1 1/2 cups shredded cheddar cheese (or Mexican blend)

6 small flour tortillas (or 4 large ones, cut in halves)

Olive oil for sautéing

Salt and pepper to taste

Sour cream, green onions, or jalapeños for topping (optional)
Instructions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Cook the meat mixture:

In a skillet, heat a splash of olive oil over medium heat.

Add diced onion and sauté for 3–4 minutes.

Add garlic and cook for 1 more minute.

Add ground beef and cook until browned. Drain excess fat.

Stir in taco seasoning, diced tomatoes, salsa/enchilada sauce, and beans if using.

Simmer for 5 minutes. Season with salt and pepper to taste.

Assemble the bake:

Layer tortillas on the bottom of the dish, tearing to fit as needed.

Spoon a layer of meat mixture over the tortillas.

Sprinkle a layer of cheese on top.

Repeat layers (tortilla → meat → cheese) until ingredients are used up, finishing with cheese on top.

Bake:

Cover with foil and bake for 20 minutes.

Remove foil and bake an additional 10 minutes, or until cheese is bubbly and golden.

Let rest for 5 minutes before slicing.
