Here’s a hearty and flavorful recipe for Cowboy Meatloaf and Potato Casserole — a comfort food classic with a Western twist!


🥔 Cowboy Meatloaf and Potato Casserole

Servings: 6–8
Prep Time: 20 minutes
Cook Time: 45–50 minutes


Ingredients:

For the Meatloaf Layer:

  • 1 ½ lbs ground beef (or a beef/pork mix)

  • 1 cup seasoned breadcrumbs

  • 1 egg

  • ½ cup BBQ sauce (plus extra for topping)

  • 1 small onion, finely chopped

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • Salt & pepper to taste

For the Potato Layer:

  • 3–4 cups mashed potatoes (fresh or leftover)

  • ½ cup shredded cheddar cheese

  • ¼ cup sour cream or cream cheese (for creaminess)

  • Salt & pepper to taste

Topping:

  • 1 cup shredded cheddar cheese

  • 4–6 slices cooked bacon, crumbled

  • 2 green onions, sliced (optional)


Instructions:

  1. Preheat oven to 375°F (190°C).
    Lightly grease a 9×13-inch baking dish.

  2. Make the meatloaf base:
    In a large bowl, combine ground beef, breadcrumbs, egg, BBQ sauce, onion, garlic powder, paprika, salt, and pepper. Mix until just combined — don’t overwork it.

  3. Press the meatloaf layer into the baking dish.
    Spread evenly and press down gently to form the base layer. Bake uncovered for 20–25 minutes.

  4. While meatloaf bakes, prepare mashed potatoes.
    Mix mashed potatoes with cheese, sour cream or cream cheese, and season to taste. You want them smooth and spreadable.

  5. Assemble the casserole:
    Remove meatloaf from oven, drain excess fat if needed.
    Spread the mashed potatoes evenly on top of the meat layer.
    Sprinkle with cheese, bacon crumbles, and green onions (if using).

  6. Bake again:
    Return to oven for 20–25 minutes, until cheese is melted and bubbly. For a golden top, broil the last 2–3 minutes.

  7. Let rest 5–10 minutes before slicing and serving.
