🥔 Cowboy Meatloaf and Potato Casserole

Ingredients:
For the Meatloaf Layer:

1 ½ lbs ground beef (or a beef/pork mix)

1 cup seasoned breadcrumbs

1 egg
-
½ cup BBQ sauce (plus extra for topping)

1 small onion, finely chopped
-
1 tsp garlic powder
-
1 tsp smoked paprika
-
Salt & pepper to taste
For the Potato Layer:

3–4 cups mashed potatoes (fresh or leftover)

½ cup shredded cheddar cheese
-
¼ cup sour cream or cream cheese (for creaminess)

Salt & pepper to taste
Topping:
-
1 cup shredded cheddar cheese
-
4–6 slices cooked bacon, crumbled
-
2 green onions, sliced (optional)
Instructions:

Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish. -
Make the meatloaf base:
In a large bowl, combine ground beef, breadcrumbs, egg, BBQ sauce, onion, garlic powder, paprika, salt, and pepper. Mix until just combined — don’t overwork it. -
Press the meatloaf layer into the baking dish.
Spread evenly and press down gently to form the base layer. Bake uncovered for 20–25 minutes. -
While meatloaf bakes, prepare mashed potatoes.
Mix mashed potatoes with cheese, sour cream or cream cheese, and season to taste. You want them smooth and spreadable. -
Assemble the casserole:
Remove meatloaf from oven, drain excess fat if needed.
Spread the mashed potatoes evenly on top of the meat layer.
Sprinkle with cheese, bacon crumbles, and green onions (if using). -
Bake again:
Return to oven for 20–25 minutes, until cheese is melted and bubbly. For a golden top, broil the last 2–3 minutes. -
Let rest 5–10 minutes before slicing and serving.
