Walking Taco Casserole

Here’s a crowd-pleasing Walking Taco Casserole recipe — it’s like taco night, but baked and cheesy with a crunchy topping!


🌮 Walking Taco Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/2 cup water

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

  • 1 can (15 oz) black beans, rinsed and drained (optional)

  • 1–1½ cups corn (frozen or canned & drained)

  • 1½–2 cups shredded cheddar or Mexican blend cheese

  • 3 cups Fritos or Doritos, slightly crushed (for topping)

  • Optional garnishes: sour cream, chopped lettuce, diced tomatoes, sliced jalapeños, green onions, cilantro


Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Cook the meat:

    • In a skillet over medium heat, cook the ground beef and diced onion until browned.

    • Drain excess fat.

    • Stir in taco seasoning and water, simmer 2–3 minutes until thickened.

  3. Mix filling:

    • Stir in Rotel, corn, and black beans (if using).

    • Simmer another 3–4 minutes to combine.

  4. Assemble casserole:

    • In a greased 9×13-inch baking dish, spread the meat mixture evenly.

    • Sprinkle shredded cheese evenly over the top.

  5. Bake:

    • Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.

  6. Add chips & toppings:

    • Remove from oven and immediately top with crushed Fritos or Doritos.

    • Garnish with your favorite toppings just before serving.


💡 Make it your own: Sub in ground chicken, add jalapeños for heat, or layer in refried beans!
