🌮 Walking Taco Casserole
Ingredients:

1 lb ground beef (or ground turkey)

1 small onion, diced

1 packet taco seasoning (or 2 tbsp homemade)

1/2 cup water
-
1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

1 can (15 oz) black beans, rinsed and drained (optional)

1–1½ cups corn (frozen or canned & drained)
-
1½–2 cups shredded cheddar or Mexican blend cheese
-
3 cups Fritos or Doritos, slightly crushed (for topping)

Optional garnishes: sour cream, chopped lettuce, diced tomatoes, sliced jalapeños, green onions, cilantro
Instructions:

Preheat oven to 350°F (175°C).

Cook the meat:

In a skillet over medium heat, cook the ground beef and diced onion until browned.

Drain excess fat.

Stir in taco seasoning and water, simmer 2–3 minutes until thickened.

Mix filling:

Stir in Rotel, corn, and black beans (if using).

Simmer another 3–4 minutes to combine.

Assemble casserole:

In a greased 9×13-inch baking dish, spread the meat mixture evenly.

Sprinkle shredded cheese evenly over the top.

Bake:

Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.

Add chips & toppings:
-
Remove from oven and immediately top with crushed Fritos or Doritos.

Garnish with your favorite toppings just before serving.
