Here’s a simple, fresh, and protein-packed recipe for an Avocado Egg & Feta Plate — perfect for breakfast, brunch, or a light lunch.


🥑 Avocado Egg & Feta Plate

Ingredients:

  • 1 ripe avocado, halved and sliced

  • 2 large eggs (cooked to your preference: poached, boiled, or fried)

  • 2–3 tablespoons feta cheese, crumbled

  • 1 small tomato or a handful of cherry tomatoes, sliced

  • 1/4 cucumber, sliced

  • Handful of arugula or mixed greens

  • 1 tablespoon olive oil

  • 1 teaspoon lemon juice or balsamic glaze

  • Salt and pepper to taste

  • Optional: red pepper flakes, fresh herbs (parsley, dill), or a slice of whole-grain toast


Instructions:

  1. Cook the Eggs:
    Prepare eggs to your liking. Soft-boiled or poached work great for a creamy texture, but hard-boiled or sunny-side-up are also excellent.

  2. Assemble the Plate:
    On a large plate, arrange sliced avocado, eggs, tomatoes, cucumber, and greens. Sprinkle crumbled feta over everything.

  3. Dress It Up:
    Drizzle olive oil and lemon juice (or balsamic) over the plate. Season with salt, pepper, and optional red pepper flakes or herbs.

  4. Optional Add-ons:
    Serve with toast, pita, or a side of hummus for a heartier meal.
