Here’s a delicious and fluffy Milk Brioche Rolls recipe — soft, buttery, and slightly sweet, perfect for breakfast or an afternoon treat.


🥖 Milk Brioche Rolls Recipe

🧈 Ingredients

  • 500 g all-purpose or bread flour

  • 7 g instant yeast (or 20 g fresh yeast)

  • 60 g sugar

  • 1 tsp salt

  • 2 eggs

  • 200 ml warm milk

  • 100 g unsalted butter, softened (plus more for brushing)

  • 1 egg (for egg wash)

  • Optional: pearl sugar or sesame seeds for topping


🥣 Instructions

1. Prepare the dough

  1. In a large mixing bowl, combine the flour, sugar, salt, and yeast (place salt and yeast on opposite sides before mixing).

  2. Add the eggs and warm milk. Mix until a sticky dough forms.

  3. Gradually add the softened butter, kneading until the dough becomes smooth and elastic (about 10–15 minutes by hand or 8–10 minutes with a stand mixer).

  4. Cover the bowl and let the dough rise in a warm place for 1.5–2 hours, or until doubled in size.

2. Shape the rolls

  1. Once risen, punch down the dough to release air.

  2. Divide into 10–12 equal portions and shape into rolls.

  3. Place them in a greased or parchment-lined baking dish or on a tray, slightly spaced.

  4. Cover and let rise again for 45–60 minutes until puffy.

3. Bake

  1. Preheat oven to 180°C (350°F).

  2. Brush the rolls with egg wash (1 egg beaten with a splash of milk).

  3. Sprinkle with toppings if desired.

  4. Bake for 20–25 minutes or until golden brown and hollow-sounding when tapped.

4. Finish

  • Brush the tops with melted butter while still warm for a shiny, soft finish.


🍞 Tips

  • For extra softness, add 1–2 tbsp milk powder to the dough.

  • These rolls freeze well – just warm in the oven before serving.
