Mini Cheesy Onion Rings with Few Carbs

Mini cheesy onion rings with fewer carbs are a fun, crunchy, low-carb snack or appetizer—perfect for keto or low-carb diets. Instead of traditional batter and breadcrumbs, we’ll use cheese and almond flour (or crushed pork rinds) for crispiness without the carbs.


Low-Carb Mini Cheesy Onion Rings

Ingredients:

  • 1 large onion (preferably sweet or yellow)

  • 1 cup shredded cheese (cheddar or mozzarella work well)

  • 1/4 cup almond flour (or) crushed pork rinds

  • 1 egg, beaten

  • Salt and pepper to taste

  • Optional: pinch of garlic powder or paprika for extra flavor

  • Oil for frying (or bake/air fry)


Instructions:

  1. Prep the onions:

    • Peel and slice the onion into thin rings.

    • Separate them into small rings (use the inner pieces for “mini” size).

  2. Set up your coating station:

    • In one bowl: place almond flour or pork rinds, seasoned with salt, pepper, and optional spices.

    • In another bowl: beaten egg.

    • In a third bowl: shredded cheese.

  3. Coat the onion rings:

    • Dip each ring into the egg, then roll in cheese, gently pressing it in.

    • Then coat with almond flour or pork rinds.

    • For extra crunch, you can double-dip: egg → cheese → almond flour → back to egg → cheese again.

  4. Cook:

    • Fry: Heat oil in a small skillet over medium heat. Fry until golden and crispy, about 1–2 minutes per side. Drain on paper towels.

    • Air Fry: Spray lightly with oil and cook at 375°F (190°C) for 6–8 minutes, flipping halfway.

    • Bake: Place on a lined tray and bake at 400°F (200°C) for 10–12 minutes, or until golden.


Tips:

  • Use finely shredded cheese so it sticks better and melts quickly.

  • Add a little grated Parmesan for extra crispiness and flavor.

  • Serve with low-carb dips like ranch, spicy mayo, or sour cream.
