Cheesy Potato Balls Recipe
Ingredients:

2 cups mashed potatoes (cooled, not too soft)

1 cup shredded mozzarella cheese (or small cubes of mozzarella)

1/4 cup grated Parmesan (optional, for extra flavor)

1/2 tsp garlic powder

1/2 tsp black pepper

Salt to taste

1/4 cup chopped green onions or herbs (optional)

1 egg (for coating)

1/2 cup all-purpose flour (for coating)

1 cup breadcrumbs (panko or regular)

Oil for deep frying

Prepare the mixture:

In a bowl, combine the mashed potatoes, garlic powder, pepper, salt, Parmesan (if using), and herbs.

Mix until well combined. Chill the mixture if it’s too soft to handle.

Form the balls:

Take a small portion of potato mixture, flatten it in your palm, place a cube or pinch of mozzarella in the center, and shape it into a ball. Repeat with the rest.

Coat the balls:

Roll each ball in flour, then dip into the beaten egg, and finally coat with breadcrumbs.

Fry:

Heat oil in a deep pan over medium heat. Fry the balls until golden brown and crispy (about 2–3 minutes).

Drain on paper towels.

Tips:

Freeze the balls for 15 minutes before frying to help them hold their shape.

You can bake or air fry them at 400°F (200°C) until golden, if you prefer a lighter version.
