A Homemade Mango Carlota (also known as “Carlota de Mango”) is a delicious and easy no-bake Mexican dessert, similar to an icebox cake. It layers sweet mango cream with Maria cookies and is chilled until set. Here’s a classic recipe:
Homemade Mango Carlota Recipe
Ingredients:
-
2 large ripe mangoes (or ~2 cups of mango pulp)
-
1 can (14 oz) sweetened condensed milk
-
1 can (12 oz) evaporated milk
-
1 package (190g) Maria cookies (or any plain tea biscuits)
-
Juice of 1 lime (optional, enhances flavor)
-
A pinch of salt
-
Mango slices or whipped cream for garnish (optional)
Instructions:
-
Prepare the Mango Cream:
-
In a blender, combine the mango pulp, condensed milk, evaporated milk, lime juice, and a pinch of salt.
-
Blend until smooth and creamy.
-
-
Assemble the Carlota:
-
In a rectangular or round dish (glass works best to see the layers), spread a thin layer of mango cream on the bottom.
-
Add a layer of Maria cookies over the cream (you can break them to fit the dish if needed).
-
Add another layer of mango cream on top of the cookies, spreading evenly.
-
Repeat the process: cookies, mango cream, until all ingredients are used, finishing with a thick layer of mango cream on top.
-
-
Chill:
-
Cover and refrigerate for at least 4 hours, preferably overnight, to allow it to set and for the cookies to soften.
-
-
Serve:
-
Garnish with mango slices, crushed cookies, or whipped cream if desired.
-
Slice and serve cold.
