Yes!  A Garlic Herb Chicken & Carrot Plate is a wholesome, flavorful, and super easy dinner that feels both rustic and elegant. Think juicy, herb-marinated chicken paired with tender, caramelized carrots — all infused with garlicky goodness.


Garlic Herb Chicken & Carrot Plate

Ingredients (Serves 2–4):

For the chicken:
  • 2–4 boneless, skinless chicken thighs or breasts

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1 tsp lemon zest + 1 tbsp lemon juice

  • Salt & pepper, to taste

For the carrots:
  • 4–5 carrots, peeled and cut into sticks or rounds

  • 1 tbsp olive oil

  • 1 tsp honey or maple syrup (optional, for a hint of sweetness)

  • Salt, pepper, and a pinch of cumin or paprika (optional)


Instructions:

  1. Marinate the chicken:
    In a bowl or zip-top bag, combine olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, and pepper. Add the chicken and coat well. Marinate for at least 30 minutes (or up to overnight in the fridge).

  2. Roast the carrots:
    Toss carrots with olive oil, salt, pepper, and honey (if using). Spread on a baking sheet in a single layer. Roast at 400°F (200°C) for 20–25 minutes, flipping halfway, until tender and caramelized.

  3. Cook the chicken:

    • Option 1 (Pan-seared): Heat a skillet over medium-high heat. Cook chicken 5–6 minutes per side, until golden and cooked through.

    • Option 2 (Oven-baked): Place chicken on a baking sheet and roast alongside the carrots for 20–25 minutes, or until internal temp reaches 165°F (74°C).

    • Option 3 (Air fryer): Cook at 375°F (190°C) for 12–15 minutes, flipping once.

  4. Plate & serve:
    Arrange the chicken and carrots on a plate. Drizzle with pan juices or a squeeze of fresh lemon. Garnish with extra herbs if you like.


Perfect Pairings:

  • Serve over mashed potatoes, rice, or quinoa

  • Add a simple green salad or steamed greens on the side

  • Finish with a dollop of herbed yogurt or garlic aioli
