Cheesy Garlic Mashed Potato Stacks

Ooh yes — Cheesy Garlic Mashed Potato Stacks are crispy on the outside, creamy and cheesy on the inside, and bursting with garlicky goodness. They’re perfect as a dinner side, party appetizer, or a fun twist on classic mashed potatoes.

Here’s a super easy recipe to make them:


Cheesy Garlic Mashed Potato Stacks

Ingredients (makes 10–12 stacks):

  • 4–5 medium potatoes, peeled and chopped

  • 3 tbsp butter

  • 1/2 cup milk or cream

  • 2 cloves garlic, minced or roasted

  • 3/4 cup shredded cheese (cheddar, mozzarella, or a blend)

  • 1/4 cup Parmesan cheese, grated

  • Salt & pepper, to taste

  • Optional: chopped chives, thyme, or parsley for garnish

  • Nonstick cooking spray or butter (for greasing muffin tin)


Instructions:

  1. Boil the potatoes:
    Place potatoes in a pot of salted water, bring to a boil, and cook until fork-tender (about 15–20 minutes). Drain well.

  2. Mash it up:
    In a bowl, mash the potatoes with butter, milk, garlic, salt, and pepper. Stir in shredded cheese and Parmesan until smooth and cheesy.

  3. Prep your muffin tin:
    Grease a 12-cup muffin tin with nonstick spray or melted butter.

  4. Scoop & stack:
    Spoon the mashed potato mixture evenly into the muffin cups, pressing down gently to form little stacks.

  5. Top it off:
    Sprinkle a bit of extra shredded cheese or Parmesan on top of each one.

  6. Bake:
    Bake at 400°F (200°C) for about 20–25 minutes, or until the tops are golden and slightly crispy.

  7. Cool & remove:
    Let them sit for a few minutes to firm up, then gently remove from the tin with a spoon or offset spatula.

  8. Serve warm:
    Garnish with chopped chives, parsley, or a dollop of sour cream if you’re feeling fancy!


Tips & Variations:

  • Add cooked bacon bits or green onions into the mash for extra flavor.

  • Try roasted garlic instead of raw for a mellow, sweet flavor.

  • Use mini muffin tins for bite-size stacks — perfect for parties!
