WHITE CHOCOLATE STRAWBERRY CHEESECAKE
Ingredients:
Crust:

1 ½ cups graham cracker crumbs (or crushed digestive biscuits)

2 tbsp sugar

6 tbsp melted butter
Filling:

12 oz white chocolate (good quality), chopped

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs
-
1 tsp vanilla extract
-
½ cup sour cream
Topping:

1 ½ cups fresh strawberries, sliced

Optional: strawberry jam or sauce for glazing
Instructions:
1. Preheat & Prep:

Preheat oven to 325°F (160°C).

Grease a 9-inch springform pan and wrap the bottom with foil (to prevent leaking in water bath).
2. Make the crust:

Mix graham crumbs, sugar, and butter. Press into the bottom of the pan.

Bake for 8 minutes, then cool.
3. Melt white chocolate:

Melt white chocolate gently over a double boiler or in 20-sec bursts in the microwave. Let it cool slightly.
4. Make the filling:

Beat cream cheese until smooth. Add sugar and mix well.

Add eggs one at a time, beating on low.

Add vanilla, sour cream, and melted white chocolate. Mix until smooth and creamy.
5. Bake:

Pour filling over crust.

Bake in a water bath (place pan in a larger dish with hot water) for about 55–65 minutes, or until the center is just set.

Turn off oven and let it sit with the door cracked for 1 hour, then refrigerate at least 4 hours or overnight.
6. Add topping:

Arrange sliced strawberries on top. Brush with warm strawberry jam if you want that shiny, glazed finish.
