Fluffy Guilt-Free Pancakes

Serves: 2 (about 6–8 pancakes)
Ready in: ~15 minutes


Ingredients:

  • 1 cup oat flour (or rolled oats blended into flour)

  • 1 ripe banana (for natural sweetness)

  • 2 eggs

  • 1/2 cup unsweetened almond milk (or any milk of choice)

  • 1 tsp baking powder

  • 1/2 tsp vanilla extract

  • Pinch of cinnamon (optional)

  • Pinch of salt

  • Coconut oil or nonstick spray for cooking


Instructions:

  1. Blend all ingredients until smooth. Let the batter rest for 5 minutes to thicken slightly.

  2. Heat a non-stick pan over medium heat with a touch of oil or spray.

  3. Pour small rounds of batter into the pan. Cook 2–3 mins per side, until bubbles form and edges look set.

  4. Flip and cook the other side until golden.

  5. Serve warm with fresh fruit, a drizzle of honey or maple syrup, or a dollop of Greek yogurt.
